Good question... a matter of fact I had to make that decision when the fires were happening 2 years ago. I packed the truck of all the pictures, home movies (not the adult ones), and clothes. My mother picked up my son and took him to her house and I video taped all my possesions for insurance purposes. Said good bye and my wife and I left. We came back the next morning and luckily the firefighters did an awesome job. The main reason was the hospital is 30 seconds north of us right next to the mountain and that was their main concern which indirectly saved us.

Can't think of anything else.
Evacuation is a very frightening notion to me. I feel for those for whom this isn't hypothetical. :(

I had to evacuate the Paradise fire in less than an hour.
Hooked up the boat and pulled it to the front of the house. Proceeded to load anything and everything I could into the bed of the truck and every nook and crany of the boat.
You would be surpised what you can accomplish when your forced into action like that.
It took me months to put everything back in its place. But lucky for my family, I had a place to put it.
