Oil/water temp sender location

Hey guys. I know this may sound like a stupid question, I just want to get this right. But where is the best place to install the water temp sender. Some areas on the motor are cooler then others. My thinking is to place the the sender where the water will be the warmest. And about the oil temp sender, do I just pull out one of the oil gallery plugs and install the oil temp sender there? If not where, I have the oil pressure sender at the oil filter location, oh yeah, for a Mark IV 454. Thanks....Joe

I have my water at the exit. (thermostat housing)
Oil temp sender is in the pan.
