Catered life told me at his party once that once the shrimp is hot,, it's done.
Makes a BFD to a good recipe to not overcook it.

lots of shrimp butter in a pan,spoon of garlic,salt,pepper to taste,pour over rice,use the bigger shrimps,a big spoon and cold beer,bread if you likes:D
basically this is it but i would rather serve it over fettuchini (sp?) noodles aand more garlic....pre boil the noobles and hold them when your shrimp is 3/4done add the noodles more butter and italian seasonings...quickly stir fry and serve with focciaca bread:)

Scampi is an easy dish to make.
Chop up 3 or 4 cloves of garlic and cook in a frying pan with 1/2 butter and 1/2 olive oil, over med heat (enough so that there is about 1/2 inch of butter and oil in the pan) Add salt and pepper to taste. Saute about 10 minutes or until the garlic is a meduim brown.
Place large, cleaned and unshelled in the pan and turn repeatedly. It takes 3 to 4 minutes to cook. When the shrimp have turned white, add about a 1/3 cup of dry white wine (chardonay) and turn the heat down to low simmer. Simmer 3 to 4 minutes and serve over pasta or rice.
That's all there is to it.

Marinate the shrimp in the shell for at least an hour in white wine with lemon or lime juice with black pepper and garlic.
Heat in skillet- olive oil, stick of butter or margerine in a pan. Season with fresh garlic to taste, ground black pepper, chopped green onions, fresh parsley, and a bit of Tony Chachere or other cayenne pepper based seasoning to taste. Shrimp are done when they are pink, probably 5-8 minutes tops.
Remove shrimp and set aside. Add marinate in pan and reduce to sauce consistancy. Mix / toss 1/4 to 1/2 the sauce with the pasta, enough to thoroughly cover, and serve the remainder on the side to dip.
Serve over linguine or angel hair pasta.
I try to use 21-25 count shrimp or larger and allow 1/4 to 1/2 lb per person.
I'll often add lump crap meat, scallops, or oysters with the shrimp.

One thing a lot of people dont know.
The larger the shrimp the better they taste.
I dont know why but would guess as they get older/bigger the flavor gets stronger...So, dont be cheap when you buy the shrimp!!!!

Try this one Mike.....not scampi but it will put some bass in your voice. :D
Take one pound of raw peeled medium shrimp. Place in a bowl. Take 2-3 cucumbers cut in quarters legth wise and cut into inch long lengths. Take half one purple onion and then cut into a quarter as well, then into slices leaving some fairly thick half rounds. Take a shit load of limes....NOT LEMONS. Cover everything in lime juice and mix it. Now comes the leaded part. Take some of the green Havanero sauce (similar to Tapatio) and add it to the lime juice. Add enough to change the color of the lime juice to a light green. Don't over do it cuz I know you bruthas can't hang with Mexican hot food. :D Season to taste with salt and black pepper. Chill for a couple of hours and let everything pickle in the lime juice for a couple of hours. Serve just like that......add beers liberally, and keep a spare bathroom. :jawdrop: :D
