Excuse my ignorance but... Do the stock fuel injection setups that have come out in the last few years for bbc etc. use an o2 sensor with wet exhausts to give feedback to the injection system?

No, they don't.
O2 sensors have a minimum operating temperature, and though I do not know what it is, it IS far higher than the boiling point of water. O2 sensors still have to be in a dry exhaust stream to work.

Stock EFI systems such as Mercruiser do not use O2 sensors. They cannot be contaminated with water and the stock exhaust would not allow for their use (this is one reason of many). We use O2 sensors in our EFI engines with aftermarket EFI systems and exhaust systems with long elbows that mix the water and exhaust far from the O2 sensor.
