That is the way mine were set up when I bought the boat and when I had Ty redo them he also left them square. Ty could give you a better explanation as to WHY they have to be square. He might be in class this morning though.....

As far as the carbs being square, I would start close to square if not square (no power valves).
Let the motor tell you what it wants.
There are alot of variables to what jetting setup your motor will want, ranging from the scoop to the headers & everything in-between.
Let the motor tell you what it wants.

It would depend on how bad of fuel economy you get and what manifold you run.
I have had success going lean on the primaries for cruise and make up for it with jetting up the secondaries. If it is a mostly pleasure and some lake race boat, getting the exact same mixture to each cylinder is not critical.
If your manifold has a bit of a plenum, it all gets mixed up in there. If you have straight shots from each barrel to a cylinder it should be jetted square. If you are pushing the limit of compression and fuel octane, jet them square.
Just my humble opinion.
