Does anyone know how efficient the 2" olson type cooler is compared to the 3"?
Also, what would be the proper way to plumb the cooling water for it?

shouldn't you get the oil to stay in the motor first:D :D

Well, see the problem is, when it gets really hot, it tends to come out. WOT=really hot oil
I'm no expert but, It's my understanding that the hotter it gets, not only does it stop lubricating but, it is to thin to stay in the motor, hence it flying out......

I have a 21' eliminator mojave daycruiser and I have 2 inch oil cooler and I've never had a problem with oil temps. I'm running about 425 hp. I have it plumbed with a raw water pickup on the bottom of the boat straight to the oil cooler and out the hull. That way at idle water is not going through the cooler and also the faster you go the more water goes through the cooler. seems to work well.
I've heard of some people running oil temp thermostat with a bypass when getting water from the jet pump.

have the two flows in opposition (crossflow).

You got any pics of how you have the water pick up? That sounds like a good idea.
