1 tablespoon butter
2 cups Potatoes O'Brien
throughly cook potatoes stirring frequently
add
1/2 cup shredded sharp cheddar
6-8 oz of egg beaters (southwestern style)
stir mixture till egg beaters are throughly cooked
serve over sourdough toast
