If you make chicken enchiladas....go buy a rotiserie chicken at Costco and then shred the cooked chicken into the enchiladas. Hands down the best chicken enchiladas I have ever have. Also...my wife uses a white sauce and adds chopped jalepenos.

Dude, you're seriously the whitest Mexican I know. Not that there's anything wrong with that. ;)

Looks like we are heading to Miguels instead of making dinner. I was going to try to make enchiladas for my gf in which I'm trying to work things out with. Since I'm off so late tonight, Miguel's cantina it is :)
As for going fast food, call me gross, but I'm still an Alberto's fan..........The roaches they add in everything are bomb!!!!:jawdrop: :D

Will get you some receipes. Depends if you like red or green sauce . IMO using New Mexico red chili is the best. Hard to find in our area. Hatch makes the best sauce in red or green. Hatch is from New Mexico. Las Palmas red is right behind Hatch as well as Macayo. see www.hatch-chile.com also see www.505chili.com

My mom always made an enchilada casserole, you know, like a big lasagna. I love it, but it must be Americanized, cuz when I go to a Mexican restaurant I don't like the enchiladas, the sauce is a little too funky.

I've heard a few good things about my enchiladas. Haven't ever made any enchilatas though, so I guess you're on your own. ;)
