Is this even possible or simi accurate?
What about using one of them temp guns and pointing it at the oil pan or the remote oil filter. Would this give oil temp?

Yes pointing it at the oil pan is what you want to do. After the oil has made its cycle and reached the pan is when and where you want to take the oil temp. Having a bung welded into the pan is a good idea.

One thing to remember when checking temps this way, is that the gun is surface sensative. In other words, a chrome oil pan, or shiny surface will scew the readings, as will shiny raw aluminum such as a remote filter housing.
A flat black surface seems to give the closest readings to actual.
