What is the best set up to get? Poking around on e bay shows a variety, but they just have one probe. Should you try to get something with more than one, or just pick the leanest hole. Any recommendations?

I use a single probe Computech. Digital readout with a memory of highest and lowest temps. I just read cylinder #1 and the plugs tell me the rest. They make 2 probe ones also. 5&6 tend to be the leanest cylidners in my motors, but manifold design could be why. Best $300 I ever spent.

We run a Edlebrock DA System with 2 EGT's & 2 A/F's ... Each tube of our headers are bunged for both ... A/F's on top and EGT's on bottom ... so we can move the sensors around and read all cylinders.

i run a probe on cy 8 that is the leanest around 1200 deg on idle
the kit is a a r c set up works well so far
