I want to do a pig roast for the 4th of july.
Last year my uncle had a company out called Rocky Mountain Hog Roasters that roasted a 140 lb pig for his union picnic. They charged $1600 for the roasted pid pig. I priced everything out to build my own roaster buy a pig and charcoal and I'll be somewhere in the ball park of $350 which is nice because I can reuse all the stuff i use to make the roaster. Future roasts will only cost me what the pig costs and charcoal.
If any of you have ever roasted a pig please let me know what kinds of spices and things like that you have had the best luck with. Do you use wood and if so what kind?

All you need is a pig, seasonings, a 4x 4 x 2-3 deep hole, some rocks (on bottom), alot of good dry mesquite, and some tin foil and, Oh Yeah ... a shovel and plenty of Beer.

If you use a suckling pig, you'll need to spice the inside, and maybe inject. Don't spice the skin, you'll just get rid of that later.
You can burn Oak or Mesquite to make coals. That usually does the job right.
You can also do a deep pit. it's about 24 hours but the results are supposed to be incredible. You can then buy less expensive pork butts or shoulders and get off easier, financially.
I love pork...

I'm going to build the roaster out of cinder blocks. It should take about 48 of them. I will be using a whole pig.

If it turns out to be a hit when I'm done I plan to give rocky mountain hog roasters a run for their money.

we used to do this on a regular basis. Just be careful. Our typical experience was start the pig, start drinking beer. around 11:00pm start eating the cracklin. Pretty soon we passed out, woke up the next morning pig burned. Cracklin was always good though.:D :D
