Your boat sounds similar to mine. Mine is a 74 Southwind 18.5 (very shallow vee). I just completed resto myself last year. Boat use to have 455 Olds and Jacuzzi WJ. Now has 454 LS6 with the following.....

11:1 Forged Pistons (= 10.2:1 with heads)
.542 lift cam with 306 deg. duration (flat tappet with roller 1.7 rockers)
Offenhauser tunnel ram with 2 Holley 6109's
(these are double pump 750's made for dual setup)
Henry Velasco forged crank ( as to not put a hole in the hull)
This motor turns an American Turbine (now with "B" cut Mag Bronze impeller, Ride plate and shoe, Place diverter) at 5800 RPM.
That's good for 72 MPH on GPS!!!!!

I would be a little careful about going much over 306 duration due to reversion problem.
(I know this first hand!!) 240deg. at 50 thousandths is about all you can run in wet bassets without needing a Manual shut-off at idle. Contact Paul at Basset Headers to verify this!!
