Spinning a Berkley 12JG at 6100 RPM with an A impeller roughly how fast would it be? 19 foot boat very light and very shallow V bottom.

Could be in the upper eighties, low nineties. I could tell you for sure in a tunnel, but not a v-jet.
TO be spinning 6100RPM's with an 'A' impeller you must have bo-koo HP or a pump that needs to be re-worked.
We run around 5800 RPMs with a 'B' impeller and run a true 97mph. This is in a CP wullwing

It is my sons boat. We figured somewhere around 90 mph. The motor is one of my old race engines. Tunnel Ram, 477 BBC Manley rods, Veniola pistons, roller cam, Crane Gold rockers, stud girdle, Some old Pro Stock GM alum heads.
Speed consists of lots of stuff.....
Just to show ya' what I mean - my TX 19 (a similar hull as wrightnow's CP gull wing) ran mid eighties at 6500 RPM with a 'B' impeller. Maybe my pump is looser, ride plate adjustment off, different intake / pick-up, nozzle size, droop snoot / wedge, there are so many influences I get confused.
It could be the water is stickier here or maybe my Texas size goat smellin' butt is slowin' me down, or I carry a bigger cooler or more gas. Is a 96 quart cooler too big?
Hitting the right combination is the key to mph. I can't predict it nor have I been able to find it, but I really enjoy lookin' for it - and I have a little extra time to look because I don't have to refill my cooler as often as most folks!

Already got 3 sons they keep me pretty busy! I was talking to Phil Bergeron and when I told him that I bought my son this Hornet he told me he thought they were the best V bottom hull he ever seen. Even though oldrigger said the mold plug was made from beer cans! Maybe thats it??? The Silver Bullet? Actually the boats name is the Green Hornet.
