Are there any gps speedos out there that will update fast enough to give the top speed on a fast hydro?

I would think you'd have to maintain the top speed for at least a couple seconds to get an accurate reading. I don't have a positive answer for you because I've never run one on this type of boat.
look into a higher end hand held and leave the display at "max speed" they almost always catch the top speed. Not necessarily in real time but in a 7 or 8 second sprint they can usually land it.
There is a processing lag of a couple of seconds or more depending on the quality of the unit to measure the time differential. Even a good quality handheld will need a couple of seconds of top speed held to get an accurate reading.

They are very accurate and they utilize Garmin receivers. If you want accuracy specs I'm sure I can come up with that for you, just not at my fingertips here.
