These went over big at our last Super Bowl party
Tequila shrimp a la Cabo Wabo
Peel and de-vein your shrimp (16-20 count)
Have ready 6 minced garlic cloves, 1 bunch chopped cilantro, salt and pepper,
2 oz tequila (Sammy recommends Cabo Wabo, but you make the call...), 1 diced jalapeno, and 4 limes.
Salt and pepper the shrimp. Add all of the shrimp to a medium hot frying pan,
keep the pan moving and the shrimp will be cooked enough in 2 - 3 minutes.
Remove shrimp from the pan and add a little oil and 1/2 cup of butter, the chopped garlic, the cilantro, and the diced jalapeno. Cook about 3 minutes, until the garlic is just cooked through. Add back the shrimp and squeeze the limes into the pan, then add the 2 oz of tequila.
THIS WILL FLAME UP SO BE CAREFUL !!
Let the flame die down, and whisk in a piece of butter to finish the sauce.
