If have to figure out what SHE would like and then go from there. Is she the party type and would love lots of friends and family over or is a romantic weekend get away with just the two of you more her style?
My sweety's 40th is Thanksgiving Doing a limo with friends down to the Gaslamp Quarter for dinner and fun the week before.
I figure even though it's all on me, it's still cheaper than other ideas she had.
I took my wife to Pureto Vallarta and had a bunch of friends meet us to surprise her.
Went to town and looked all over for B-Day decorations and had a bakery deliver a cake. We decorated several Palapas with ballons, ribbons, Pinatas flowers etc. Had the hotel wait on us hand and foot on the beach.
People were walking by taking pictures of us, some people even brought her drinks and little gifts from the hotel gift store.
The next day in town people were still coming up to us and saying "Hey you're the birthday party people! Where are you going tonight? We want to be there!"
She'll never forget it.

I hired a sushi chef from the local sushi bar and he came to the house. I rented some tables and put them with lots of pillows on the floor. Throw in some Japanese decorations. Invite 20 friends, sake, beer and maybe a DJ for later and you will have a birthday to remember. My wife still talks about her 40th. The whole night cost about 1,500.
