I like my 38CK Next Level, nice thing is that it's a fifith wheel and I can still keep my lift... just needed to drop the back 2", highest bed rail clearance of the market.
I used the Featherlite trailers for the cars in the past and that idea of the converted stock/horse is interesting.

prefer lower profile(wind)

Gooseneck/fifth wheel
upper end finishing
and upper end is very tough.I was at the big RV show here a few weeks back,they dont make low profile high end 5th wheels..

Featherlite? or one of the RV based ones?
You will be better off with something built as a trailer. Featherlight, Dominator, Along with towing and hauling a load better the have much better resale.
