I want to use granite, but I'm not sure if it will be too hot.

There are ALOT of different colors of granite. I would go with a lighter color if it's going to get alot of direct sunlight.
Silestone is also a good option. Lots of light colors available and its non-porous. With Granite, you will need to seal it at least twice a year. And most light colored granite scratches easier than the darker colors

Not easily. Its some pretty tough stuff. If I remember correctly, it contains over 95% quartz.

Slate is choice #2. I really want something very durable that I can get in one piece (no grout).

Just stay away from dark granite. My installer had a dark color in direct sunlight crack right down the middle for one of his customers!
My bro in law has granite under shade in Havi and has had no problems
