Will get you some receipes. Depends if you like red or green sauce . IMO using New Mexico red chili is the best. Hard to find in our area. Hatch makes the best sauce in red or green. My mom always made an enchilada casserole, you know, like a big lasagna. I love it, but it must be Americanized, cuz when I go to a Mexican restaurant I don't like the enchiladas, the sauce is a little too funky.
