What does SPDT mean with regard to these switches. They say the are ON OFF ON SPDT?

    Switch Terminology (http://www.kpsec.freeuk.com/components/switch.htm)
    ON-OFF-ON
    SPDT Centre Off
A special version of the standard SPDT switch. It has a third switching position in the centre which is off. Momentary (ON)-OFF-(ON) versions are also available where the switch returns to the central off position when released.
    Hope that helps

Unless it has a "center off" marking it may just be a simple single-pole double throw which powers circuit "A" when switched up (or left, whatever) and powers Circuit "B" when switched down with no center off position.
A 3-way light switch setup in a house is a bit more complicated version, but uses 2 SPDT switches. when both are set the same, the light works, when they are set differently, it does not.
The trim switch in my Taylor (elec-factory) is a momentary-on SPDT.
A fuel tank gauge sender switch on a 2-tank setup would be a regular SPDT use. Left gauge read switched left, right gauge read switched right. A DPDT could also activate the elec fuel pump circuit if used (double pole for 2 circuits)
