I'll be the first to take a shot at this. This is my personal preference....
    20ft
    day cruiser
    v bottom
    offshore style seating
    engine cover closed
I dont understand your gelcoat question, but I prefer a custom gelcoat, something unique that I have a say in the design.
I'd prefer to buy the boat as a complete kit and as far as price goes, I'd pay whatever was resonable.

Help Out- I have seen your posts for a affordable Jet Boat. What would you want.In my perfect world, I would choose:
    20'
    open bow or bubbledeck
basic buckets and bench interior with closed motor (insurance reasons)
    V-bottom
Nice gel scheme, but not too exotic
tandem axle trailer with swinging tongue and brakes
    complete less motor
    under 18K

If someone had the mold to my Bonneville TR (19 foot v-bottom/tunnel) i'd buy a new one.
i'd like it fully rigged with coctail seating, gauges, wiring, cables, minus the motor and pump. set back intake set into the hull, hole cut in the transom for the pump.
With a 5-color gel coat, tow cover and nice dual axle trailer, i'd spend about 15-18K.
    man that'd be nice!

something along the the lines of the spectra 19.
i am knid of liking the 1989 20.5 ft proboat in the trader right now. look under brekely as the keyword. or how about the old banners, rogers, sangers, soutwind dragsters, the ultra formulas of the mid nineties(hint hint). ill be back in a fer with some more.

btw 16 is a little short for skiing behind it seems like the skiier tends to pull the boat around
