Stay with a 17 inch pitch but use a 4 or 5 blade prop. u will only lose a few mph.

If you're not too concerned about your drive, you could try a switch pitch prop?? I have one on an old (1977 17.5' SlickCraft, 351ci 233hp) and it works great! The boat leaps out of the hole, and it does an honest 50mph (GPS) after it shifts! Seems kinda hard on the drive when it shifts, but it's old and its held together three years with the shifting so it must not be too bad!!
    Good luck!
