Havasu Barney lifted my boat with an engine hoist at the back and an engine hoist at the front, ran a strap thru the exhaust holes in the transom to the hoist in the rear and a strap thru the eye up front for the hoist up front. That is how he pulled it off of the trailer and put it back on. It actually worked very well, but my hull was completely gutted, no motor inside.

Here's how I do it.
Slide the boat back off of the trailer one foot,
set up two floor jacks topped with a 12" 4x4 capped with carpet set along the rear of the outside chine where its off of the trailer,
raise the rear of the boat with the jacks,
raise the front with an engine hoist and strap through the bow eye, and very carefully pull the trailer out from under the boat while laying tires, foam, rolls of old carpet face out (this works really well), mattresses or anything else you can find to protect the bottom of the boat and to lower the boat onto.

Using a sling system to remove the boat from the trailer seems to be the best way.
I have been advised to remove all fuel, engine, and jet drive prior to setting boat on stands.
